It was not la piel de jocoque that she was referring to but rather el pie de jocoque. El pie de jocoque is a bit of the leftover jocoque which is used as a source of culture (yeast and bacteria) used to start a new batch.Sort of like they do with sourdough.
Carlos, that jocoque reference was driving me crazy. I also thought Agatha was saying say PIE de jocoque. But foot still didn't make any more sense than skin. Your translation now makes perfect sense regarding Adriana's explanation about reserving a bit of the jocoque. However, while looking for any kind of jocoque dicho or refrane I did manage to find a whole slew of new dichos which I will share when I do my recap. Hooray, dicho of the day will rise again! JudyB will love them.
