WEEKEND DISCUSSION: A RECIPE FOR A GOOD (OR NOT SO GOOD) TN



Patio Peeps, I'm having a hard time coming up with new topics for weekend discussions. Being that said...

Anita led us through a discussion of the telenovela kitchens and food—para lambarse los dedos (finger lickin’ good)!  For this week’s discussion, let’s bring forth some of the recipes, snacks and even some nice “spirits” that we here on Caray! Caray! have cherished and delighted on throughout the years...from Susanlynn’s Hopeos, to Kirby’s justice juice and those oh-so-popular Doritos for detention hall to those shared delicacies that we have seen in TNs…just to get us through a TN. Jarifa and JudyB, I do recall that you had some serious snacking recently during LQNPA LOL 

Just a reminder that Halloween, Thanksgiving and Christmas are just around the corner. So, ladies and gents, take advantage of this opportunity; this is your chance to share your favorite treats and recipes…even the “OT” ones!

Recipes.... in case I didn't post it before, here is my Southwest Oven Fried Chicken:

Chicken parts
Equal parts Goya Salsa Verde (medium) and Goya Recaito (in the glass jar)
Plain bread crumbs
Regular Adobo

Mix the two green liquid ingredients and marinate chicken in them for half an hour.
Preheat oven to 400F and mix bread crumbs and adobo. Put some cooking oil in roasting pans and allow to heat in oven for a few minutes.
Remove chicken from marinade, making sure pieces are well-coated. Dredge in mixture of the dry ingredients and place in oven pans. After first 15 minutes turn with spatula. Breast pieces should be put skin side down first, then remain on bone side thereafter Turn drumsticks 90 degrees every 13 minutes thereafter. Serve with bean salad or refried beans.

UA....sounds good , but is it spicy ? I cannot eat spicy foods.
 

That was a huge hit a few years ago when I made it at a friend's house. A Brazilian woman fell in love with it and I sent her the recipe. Two days later she replied "My husband wants this at least once a week!"

Bean Salad:

Goya beans (standard 15 0z.cans), as many different ones as you want

For each can of beans:

1 length of celery, diced
One medium scallion, finely chopped (use most of the green part)
3 tbsp chopped fresh parsely
3 tbsp fresh dill
Lemon adobo
1/2 tsp celery seed
Extra virgin olive oil
Red or White wine vinegar

Drain and rinse beans until water runs clear. Combine all ingredients and refrigerate at least four hours before serving.
 

The chicken recipe isn't spicy. The aroma is fabulous!

In terms of TN desserts, I wish I had Juan's recipe for the heart shaped cookies he baked so sexily and lovingly for Sophia (Fuego en la Sangre)! The bread also looked delicious - beautiful men baking bread. What could be better???

My beloved and greatly missed Aunt made only one thing. Cheese cake. And that was all she needed. I've not made it myself as it was something that was uniquely hers and I wanted to always remember it as the perfect confection it was.

I share this recipe (which she carefully typed on an index card) with loving and fond memories.

Creamy Cheese Cake

Bottom Crust: 2 cups graham cracker crumbs; 5 T melted butter (combine and press on bottom of pan), If desired, add 2 T sugar to mixture. Use 9" greased spring-form pan. Bake at 325 for 5 minutes. Let cool.

Cheesecake: 1 cup sugar; 4 eggs separated; 2 T lemon juice; 1 t vanilla and 4 8 oz. packages of cream cheese.

Mix egg yokes, sugar, lemon juice, vanilla and 16 ounces of the cream cheese with beater (or in blender at medium) til smooth. Add remaining cream cheese and mix til smooth. Beat egg whites till stiff; fold cheese mixture in egg whites; pour into pan; bake at 300 for 45-50 minutes.

Topping: 2 cups sour cream; 2 T sugar and 1 t vanilla.

Mix together topping ingredients; spread evenly over cake and return to oven for 10 minutes. Then set in oven for 1 hour (door open); cool to room temperature; refrigerate.

Diana, thank you so much for the cheesecake recipe. It all looks so easy. . . . Maybe one of these days. . .

I wish I had something to contribute but I cook and bake with a little bit of this and a little bit of that.
 

Discovered this late RGV CHICK. Sorry. The chicken recipe sounds divine. If I still cooked meat at home I would have made it already URBAN!

Ditto for the cheesecake DIANA. I did make a super-rich cheesecake recipe once. I think it was from the Total Woman Cookbook. Anybody remember when that was all the rage? And the recipes therein were delicious but as time goes on, "other things" go on, and suddenly we're back to puritanical whole grains, fruits and vegetables and oh dang! I miss those carefree days of rich food, cocktails, wine and still feeling like my whole life were ahead of me!
